You can also prepare and bake Plain Sponge Cake bases gluten-free and make wonderful cakes with them.

Plain Sponge Cake

Ingredients for Plain Sponge Cake Recipe:

4 eggs
Salt
100 g fine sugar
1 tsp baking powder
160 g cornflour
Also: fat for the mould

Instructions:

Preheat the oven to 340°F. Separate the eggs. Whisk the egg whites with 1 pinch of salt until stiff. Slowly add the sugar and continue beating the mixture until it peaks.

Separately, whisk the egg yolks with 4 tbsp. cold water until foamy. Then add the baking powder and cornflour to the egg yolk mixture and stir until creamy. Carefully fold the beaten egg whites into the egg yolk mixture.

Grease the base of the tin or cover with baking paper, pour in the batter and bake in the preheated oven (centre) for approx. 30 minutes until light brown. Remove the sponge from the tin, leave to cool on a cooling rack and process according to the recipe. The sponge can be divided once or twice for a cake.
