Moist Sponge Cake Recipe

Baking a particularly airy sponge cake base is sometimes not so easy. Therefore, we have developed a recipe for you, with which you are guaranteed to succeed the Moist Sponge Cake Recipe and you can conjure up beautiful cakes and pies with it.

This will make your sponge cake perfect:

Grease the bottom of the springform pan for the sponge cake at most, so that the sponge cake can rise nicely.

The volume is crucial: the eggs should be beaten for a good 5 minutes so that their volume increases significantly and they become nice and fluffy.

The flour or starch should be sifted into the egg mixture to avoid lumps.

Gently fold in the flour a little at a time so that not too much air escapes.

Immediately after stirring and folding in the flour, pour the sponge into the pan and bake so that the air does not escape from the dough again.

Moist Sponge Cake Recipe

Ingredients for Moist Sponge Cake Recipe:

3 Eggs
120 g Sugar
1 pinch Salt
90 g Flour
2 TSP. baking powder
some butter for the mold

Method

Beat eggs with sugar for 5 minutes until foamy. This should well double the volume. The mass becomes nice and thick with time.

Mix flour with salt and baking powder and sift into the egg mixture to avoid lumps. Preheat oven to 350 degrees.

Fold in carefully little by little so that not too much air escapes. Grease the springform pan base (Ø 26 cm). Pour in the dough and bake in the preheated oven for approx. 20 minutes. Run a knife between the dough and the edge of the springform pan to loosen the edge. Turn out the sponge cake base onto a cake rack and allow to cool.
