Easy Christmas Cake

This low-carb recipe can be made in no time at all. This Easy Christmas Cake is convincing because it is particularly light and yet seduces with the warm and typical flavours of this time of year.

Easy Christmas Cake

Ingredients for Easy Christmas Cake:

4 eggs
300 gram yoghurt
100 gram xylitol
250 grams almond flour, not de-oiled
1 packet cream of tartar baking powder
pulp of half a vanilla pod
80 ml vegetable oil
a pinch of ground cardamom
a pinch of ginger powder
a pinch of aniseed powder
a little orange zest
1 teaspoon double-de-oiled cocoa
1/2 teaspoon ground cinnamon
butter to grease the baking tin
powdered xylitol for dusting

Cream the eggs with the yoghurt and xylitol. Mix in the almond flour and baking powder. Stir in the vanilla, oil, cardamom, ginger, aniseed and orange zest.

Grease a 22 cm diameter cake tin well and pour in a third of the mixture.

Mix a third of the mixture with the cocoa and cinnamon and spread over the mixture in the mould. Then spread the remaining third on top.

Preheat the oven to 340° F. Bake the cake at top and bottom heat for 50 minutes.

Remove from the oven, leave to cool, sprinkle with caster sugar, cut, serve and enjoy.
