Ingredients for Moist Christmas Cake:
For the cake:
50 gram soft butter
50 gram xylitol
80 grams ground almonds
80 grams ground walnuts
80 grams hazelnuts grated
1 tsp cream of tartar baking powder
3 tbsp cocoa double de-oiled
1 tsp ground cinnamon
1/2 tsp orange zest
a pinch of vanilla powder
150 ml almond milk
a pinch of rock salt
vegetable oil to grease the baking tin
For the glaze:
For the cake, put all the ingredients in the food processor and mix for 5 minutes on the highest setting. You can also use a hand mixer for this.
Grease a 22 cm diameter cake tin well with vegetable oil and pour in the batter.
Preheat the oven to 340° F and bake the cake at top and bottom heat for 50 minutes. Remove from the oven and leave to cool.
Decorate it with powdered sugar. Serve.
