White Christmas Cake

If you are looking for a delicious cake for Christmas and for the winter season in general, you should take a closer look at this White Christmas Cake! It is a real eye-catcher and at the same time a delicious treat. Due to its many layers, the vanilla and cream cake is guaranteed to make a real impression.

White Christmas Cake

Ingredients for White Christmas Cake:

For the cake layers:
3 medium eggs
120 grams sugar
5 tablespoons lukewarm water
100 grams wheat flour
50 grams ground vanilla crescents
30 grams cornflour
1 teaspoon baking powder
1 teaspoon vanilla paste
1 pinch of salt

For the fruit layer:
3 medium pears
2 teaspoons lemon juice
250 grams pear juice
1 packet agar-agar or gelatine (fixed)

For the filling:
500 grams mascarpone
400 grams of cream
2 packets of cream stiffener
2 teaspoons almond syrup, optional
80 grams icing sugar
1 teaspoon vanilla paste

For the decoration:
Icing sugar
sprinkles

Instructions:

Preheat the oven to 350 degrees top and bottom heat. Grind the vanilla crescents in a mixer.

Beat the eggs, sugar, water and vanilla together until doubled in volume. Sift in the flour, cornflour, salt and baking powder and fold in.

Fold in the ground vanilla crescents. Pour the batter into an 18 cm springform pan, bake for approx. 30 minutes and leave to cool.
Wash the pears and cut into cubes. Bring the pear pieces to the boil with the remaining ingredients and simmer for 2 minutes. Then leave to cool a little.

Briefly whip the mascarpone with the almond syrup, icing sugar and vanilla. Whip 200 g cream with 1 cream stiffener and fold into the mascarpone mixture.

Cut the cake base in two horizontally. Stretch a cake ring around the first cake base and fill with the fruit filling. Chill until completely cool.

Divide the mascarpone cream in half for the filling. Pour the first part of the filling onto the fruit layer and place the second cake base on top. Now add more of the filling and place the last cake layer on top.

Finally, whip 200 g of cream with cream stabilizer and spread on the cake. For decoration, garnish with sprinkles.
