18th Birthday Cake

Ingredients for 18th Birthday Cake:

For the shortcrust pastry:
240 gram butter
100 g icing sugar
1 pinch of salt
1 teaspoon vanilla extract
1 egg
330 grams flour
120 grams ground almonds

For the cream cheese:
600 grams cream
1 sachet Sanapart
300 grams cream cheese (double cream stage)
1 teaspoon vanilla extract
150 grams icing sugar

For the decoration:
Macarons
Strawberries
Mint
White and pink meringue drops
Flowers of your choice

Instructions:

Shortcrust pastry: Knead the butter with the icing sugar, salt and vanilla extract. Add the egg and stir the mixture in briefly. Now add the flour and ground almonds and quickly knead everything into a shortcrust pastry. Cover the dough and place it in the fridge for at least 1 hour.

Then knead the dough briefly and roll out on a floured baking sheet or on baking paper to a thickness of about 5 mm.
Now place the number template DIN A4 (printed out in Word – you can also draw the number by hand directly on the baking paper with a pencil) on the short pastry and cut it out twice.

Now place the cut-out number biscuits in the freezer for at least 30 minutes. Preheat the oven to 340°F top/bottom heat and bake the number biscuits for approx. 18 minutes until the edges are lightly browned. Then allow the number biscuits to cool completely.
Cream cheese cream: Beat the cream with the Sanapart, cream cheese, vanilla extract and icing sugar with a mixer until stiff.

Assemble Number Cake: Pour the cream into a piping bag with a large hole nozzle. Place the bottom biscuit on a cake plate or a nice base and pipe small dots onto the biscuit with the piping bag so that it is completely covered. Now place the second biscuit on top and also decorate with full dots. Finally, decorate the Number Cake with the white and pink meringue drops, strawberries, macarons and flower serve immediately.
