Vegan Gluten Free Cake

A Vegan Gluten Free Cake marble cake that lovers of classic cakes will also love. It’s not only fluffy, moist and super chocolaty, but could also be eaten as breakfast. It is made with oats and is therefore a marble cake without gluten.

Vegan Gluten Free Cake

Ingredients for Vegan Gluten Free Cake:

140g ground oat flakes
100 g blanched almond flour
70 g potato starch or arrowroot starch
3 tsp baking powder
60 g sweetener of your choice (coconut sugar or maple syrup)
1 tsp vanilla extract
3 tbsp cashew puree, blanched almond puree or tahini
230 ml sparkling water
50 ml almond milk
1 tsp apple vinegar
2 tbsp cocoa powder
2 tbsp almond milk

Instructions:

First mix the wet ingredients until creamy. Weigh out the dry ingredients except for the cocoa powder. Add the cream to the dry ingredients.

Now mix the dough until there are no more dough residues. I use my food processor for this and mix until a smooth dough is formed.

You can now pour half of the batter into the prepared springform pan.

Now add the cocoa powder and almond milk to the other half and mix until well combined.

Now spread the dark batter over the light batter and bake the cake for about 20 to 30 minutes at 180° C in a preheated oven.

Test with a toothpick to see if the batter is cooked through.
