Vegan Chocolate Loaf Cake

This is the best recipe for Vegan Chocolate Loaf Cake that I have made so far! The only recipe that can compete in taste is the one for real brownies.

Vegan Chocolate Loaf Cake

Ingredients for Vegan Chocolate Loaf Cake:

100 g spelt flour
40 g wholemeal spelt flour
1 1/2 tsp pure tartar baking powder
1 tsp baking soda
80 g Mascobado sugar
3 tbsp raw cocoa powder (heavily de-oiled)
1/4 tsp bourbon vanilla powder
1/2 tsp sea salt
1/4 tsp cinnamon (Ceylon)
1 tbsp chia seeds
2 large apples, peeled and finely chopped (270 g net weight)
1 x 200 ml can organic coconut milk
100 g dark chocolate (70% cocoa), finely chopped
50 g roasted hazelnuts, finely chopped
Chocolate chips and Walnut for garnish (optional)

Instructions:

Preheat the oven to 350° F and grease a loaf tin with coconut oil. Then line with baking paper so that the bottom and long sides are covered (the coconut oil prevents the baking paper from sticking).

Mix the dry ingredients (except the chocolate and nuts) in a bowl.

Puree the chopped apples and coconut milk in a food processor or with a blender until it forms an apple sauce.

Pour the applesauce over the dry ingredients and mix with a kitchen spatula. Be careful not to mix too much! If the dough is too dry, you can add a tablespoon of unsweetened, vegetable milk.

Now fold in the dark chocolate and hazelnuts and pour the dough into the prepared loaf tin. Then garnish with chocolate chips and a few walnuts (optional).

Bake the cake in the oven until a toothpick comes out almost clean when inserted (about 1 hour). Attention: remember that you have chocolate that melts. You should test the bread a few times in between to see if it is ready.

Note: The baking time can vary depending on how juicy the apples are and how creamy the coconut milk is. Sometimes you may need to bake the Double Chocolate Cake up to 10 minutes longer in the oven. The consistency should be similar to real chocolate brownies. The chocolate cake is slightly moister than a normal cake.

Remove the cake from the oven and leave to cool on the rack for 10 minutes. Then you can remove it from the baking tin and place it back on the rack to cool completely before cutting it.
