Ingredients for Vegan Biscoff Cake

Lotus Biscoff Cheesecake for a 24 springform pan:
250g Lotus Biscoff cookies & 3-4 for the decoration
100g butter
500g cream cheese
300g Lotus Biscoff cream
250ml cream
80g powdered sugar
14g ground gelatin
Some water

Method:

Mix the Gealntine with 5 tablespoons of cold water and leave to swell for 10 minutes.

In the meantime, melt the butter and crush the cookies ( as fine as possible). Mix the melted butter with the cookies and pour into a greased springform pan lined with baking paper and press firmly. Chill.

For the cream, mix the cream cheese with 200g of the lotus cream and the powdered sugar. Whip the cream until stiff. Heat the Gealntine briefly in the microwave until it is liquid again. Stir a little of the cream (about 1 tablespoon) into the Gealntine and then add the Gealntine to the remaining cream. Fold in the cream. Pour the finished cream on the cookie base and let it set for four hours (preferably over seam).

Remove the cake from the mold. For the topping, heat 100g of lotus cream in the microwave until it is liquid and pour over the cake, then decorate with a few crumbled cookies.
