Have you ever baked vegan? Sounds almost impossible, doesn’t it? After all, “vegan” often sounds like bland tofu and strange substitute products. But that doesn’t have to be the case! Today I have a recipe for a Vegan Birthday Cake that will convince even the biggest critics!
Ingredients for Vegan Birthday Cake:
FOR THE DOUGH
325g flour, sifted
45g cocoa powder
1 sachet baking powder
1,5 tsp baking soda (heaped)
420ml vegetable milk (e.g. rice, almond or oat milk)
2 tbsp apple vinegar or lemon juice
120ml sunflower oil
1 tsp vanilla extract
1 tsp instant coffee powder mixed with 1 tbsp hot water (optional, intensifies the chocolate flavour)
FOR THE FROSTING
150g soft vegan butter
380g icing sugar, sifted
4 tbsp cocoa powder
1 pinch of salt
2 tbsp vegetable milk
strawberry and blueberries, as needed
FOR THE DOUGH:
Preheat the oven to 350°F top and bottom heat.
Prepare two 25cm diameter springform tins.
Mix all the dry ingredients in a bowl.
Pour the vegetable milk into a tall mug and add the apple cider vinegar (or lemon juice). Set aside.
Meanwhile, mix the remaining liquid ingredients, add to the dry ingredients and whisk briefly.
Now add the vegetable milk mixture (which has curdled in the meantime) and whisk again to mix everything together quickly and pour into the springform tins.
Bake for approx. 40 – 50 minutes, test with a cake tester and leave to cool on a cooling rack.
FOR THE FROSTING:
For the frosting, whip all the ingredients with a mixer and chill until ready to use.
Fill the cooled cake with the frosting and spread it over the top.
Decorate with berries as you like.
