A great low-carb recipe for in-between meals is the Vanilla Mug Cake. Even if friends have unexpectedly arrived for coffee, this sweet delicacy can be conjured up in no time at all.
Ingredients for Vanilla Mug Cake Recipe:
1 tbsp xylitol
some vanilla flavouring
2 tbsp almond flour
1 pinch tartar baking powder
2 tbsp cream
butter to grease the cup
Separate the eggs and beat the whites until stiff.
Beat the egg yolks with the xylitol until foamy.
Stir in the vanilla, almond flour, baking powder and cream well and gently fold in the beaten egg whites.
Grease the cup with butter and pour in the mixture.
Preheat the oven to 350°F and bake the cup cake at top and bottom heat for 15 minutes. You can also bake the cake conveniently in the Airfryer.
Remove from the oven and spoon directly from the cup while still hot.
