Ingredients for Tiramisu Cake

FOR THE CREAM:
250 g cream
1 pck. cream stiffener
3 sheets gelatine
4 egg yolks
80 g sugar
750 g mascarpone
3 tbsp. milk
FOR THE COFFEE BREW
1 small cup of cold espresso
2 tsp sugar
5 tbsp amaretto
200 g lady fingers
2 tbsp baking cocoa for sprinkling
For the cream, slowly whip the cream with the cream stiffener and refrigerate until ready to use. Prepare the cake plate and place a cake ring (Ø 26 cm) on the plate. Place about half of the ladyfingers on the base (the base must be completely covered).
Mix all the ingredients together for the coffee brew. Drizzle over the ladyfingers. For the cream, soak the gelatine in ice-cold water for several minutes.
Place the egg yolks with the sugar in a metal bowl and whisk over a hot water bath for about 5 minutes until foamy, then transfer to a stand mixer and whip until cold.
Squeeze out the gelatine and dissolve over a water bath. First add 3 tbsp of the egg yolk mixture, then combine everything. In a separate bowl, mix the mascarpone with the milk until smooth. Stir the mascarpone cream into the egg yolk mixture by the tablespoonful.
Finally, fold the chilled whipped cream into the cream. Fill the cream into a piping bag with a nozzle. Spoon about a third of the cream, starting from the centre, in a spiral and about 1 cm thick onto the soaked ladyfingers.
Place the remaining ladyfingers on top of the cream and drizzle with the remaining coffee brew. Pipe another layer of cream about 1 cm thick onto the base. Using the remaining cream, pipe round drops onto the cake, starting from the centre.
Refrigerate the tiramisu cake for at least 3 hours or until serving time. Sprinkle with cocoa powder just before serving. This tart makes 12 pieces.
