Baking a super delicious Strawberry Swiss Roll Cake according to grandma’s recipe with cream filling is so much easier than you think! We’ll give you a recipe that’s sure to work!
Ingredients for Strawberry Swiss Roll Cake:
FOR THE BISCUIT ROLL:
150 g sugar
1 packet vanilla sugar
3 tbsp. mineral water
1 pinch of salt
120 g flour
30 g starch
1 tsp baking powder
some sugar (for sprinkling on the cloth)
some icing sugar (for the decoration)
FOR THE FILLING:
500 g cream
2 pck. cream stiffener
400 g strawberries
2 tsp sugar
150 g strawberry jam (without pieces)
Preheat the oven to 400°F top and bottom heat. Line a baking tray (30 x 40 cm) with baking paper.
Separate the eggs for the sponge roll. Whip the egg whites with the sugar, vanilla sugar, mineral water and salt until stiff peaks form, add the egg yolks and stir in briefly. Sieve the remaining ingredients and fold in three portions. Spread the sponge mixture evenly on a baking tray.
Bake the sponge roll for 12 minutes. Sprinkle a clean kitchen towel with sugar, turn the sponge directly onto the towel after baking, peel off the baking paper and carefully roll up the sponge. Leave to cool completely.
For the filling, place the chilled cream in a mixing bowl and whisk well, add the cream stiffener and whip until stiff. For the decoration, place 6 tbsp of the whipped cream in a piping bag with a star nozzle and chill for decoration. Store the rest of the cream in the refrigerator until ready to use.
Wash and dry the strawberries and set aside 6 strawberries for decoration. Remove the green stalk from the remaining strawberries and cut the strawberries into fine pieces. Mix in the sugar and leave the strawberries to stand for 10 minutes.
Carefully fold the strawberries into the stiffly whipped cream. Unroll the sponge roll, first spread the strawberry jam and then the strawberry cream on the sponge. Roll up the sponge roll again and chill for 2 hours.
Before serving, decorate the strawberry sponge roll with icing sugar as desired, pipe on 12 dots of cream. Cut the remaining 6 strawberries in half and place on top of the cream drops. Serve the strawberry sponge roll chilled and enjoy. The roll makes approx. 12 pieces.
