Ingredients for Staffordshire Oatcakes
1 cup all purpose flour
3/4 cups oats
1 tablespoon sugar
pinch of salt
1 sachet quick yeast
1 teaspoon baking powder
1 teaspoon baking soda
4 tablespoons unsalted butter
Optional fillings: Bacon, sautéed mushrooms, leftover roast, maple syrup, sautéed apples
In a large bowl, whisk together the flour, oats, sugar, salt and yeast. Stir in 2 cups of warm water. Cover with a large towel and let rest for about 1 hour until the mixture is bubbly.
Stir the baking powder and baking soda into the batter. Melt 1 tablespoon butter in a large skillet over medium heat. Pour 1/4 cup of the batter into the pan You will need to work in batches. Cook until bubbles form turn the top of the oatcake over, about 2 minutes, then flip and cook until the bottom is browned, about 1 more minute. Repeat until the batter is gone, then serve immediately with the additional toppings.
