Simnel Cake

Bake a my Easy Simnel Cake topped with marzipan for Easter! Follow my step by step Instructions and how to make this fragrant light fruitcake. Do not forget to cook this delicious cake at home with this recipe.

Simnel Cake

Ingredients for Simnel Cake

500 grams marzipan
300 grams butter soft
300 grams brown sugar
5 medium eggs
250 grams wheat flour
1 pinch of salt
2 teaspoons baking powder
50 grams of ground almonds
1 piece of grated orange peel
1 piece of grated lemon peel
250 grams of raisins
100 grams candied lemon and orange peel
90 grams currants
150 grams of dried cherries
250 milliliters of brandy for soaking the dried fruit

Instructions

The day before or a few hours before, soak the dried fruit in the brandy. Alternatively, apple juice or orange juice is suitable.

Grease a springform pan with a diameter of about 23cm and high sides and line the bottom and sides of the pan with baking paper. This step sounds a bit awkward, but it’s worth it because otherwise, the Simnel Cake will stick to the pan because of all the dried fruit.

Roll out 200g of marzipan on a work surface sprinkled with powdered sugar and cut out a circle. This should be about 1cm less in diameter than your springform pan.

Beat the butter, sugar and eggs together. Combine the flour and baking powder and add to the butter and egg mixture along with the almonds, salt and grated lemon and orange zest. Mix everything together with a pastry spatula.

Then drain the dried fruit and fold it into the batter. Pour half of the batter into the mold and smooth it out. Place the marzipan lid on top of the dough and press down lightly. Fill the 2nd half of the dough on top of the marzipan and smooth everything down.

Bake in the preheated oven (circulating air approx. 300°F) for approx. 2 hours. At the end of the baking time, test with a chopstick and do not pierce the marzipan layer. Let the Simnel Cake cool in the mold for about 30 minutes and then remove it from the mold. Allow cooling completely.

Form 11 small balls from the remaining marzipan (max. 2cm diameter) and set aside. Then roll out the rest of the marzipan and cut out a circle that is exactly the same size as your cake. Place the marzipan lid on the Simnel Cake and decoratively press or curl the edge. Spread the marzipan balls over the edge of the Simnel Cake and press down lightly.
