This old favorite is the kind that kids will love helping out Rock Cakes. Make one serving for an after-school treat, but don’t forget to set aside some to put in the lunch box the next day.
Ingredients for Rock Cakes
2 cups self-cooking flour
1/2 teaspoon cinnamon
90g unsalted butter
1/3 cup caster sugar
1 cup sultanas
9 mixed glace cherries
1 egg, lightly beaten
1/2 cup milk
Preheat the oven to 350°F.
Line two baking sheets with parchment paper.
Sift the flour and cinnamon into a large bowl, then rub in the butter until it resembles breadcrumbs.
Stir in the sugar and fruit.
Stir in the egg and enough milk to form a firm dough (it should still be moist).
Place a tablespoon of the dough on the baking sheets, about 5 cm apart.
Bake for 15-20 minutes until golden brown.
Leave to cool on a wire rack.
