One of the juiciest sheet cakes ever is the Rhubarb Cake Recipe with fantastically delicious crumbles. Definitely one of the best recipes when rhubarb season is around the corner.
Ingredients for Rhubarb Cake Recipe:
FOR THE DOUGH
250 g soft butter
200 g sugar
200 g wheat flour
2 teaspoons baking powder
1 pinch of salt
2 tsp lemon zest
500 g Rhubarb
500 g Strawberries
Some butter for the mould
FOR THE CRUMBLE
125 g cold butter
100 g Sugar
200 g Wheat flour
1 pinch salt
100 g ground almonds
1 pck. Vanilla sugar
Preheat the oven to 180°C top/bottom heat. Grease a baking tray (39 x 26 x 4 cm) well.
For the dough, mix the butter and sugar together. Gradually add the eggs. Mix the flour, baking powder, salt and lemon zest and add to the butter mixture. Mix everything together well. Pour the batter into a greased baking tray.
Wash and peel the rhubarb and cut into 2 cm pieces. Wash and quarter the strawberries in the same way. Spread the strawberries and rhubarb pieces on the pastry.
For the crumble, knead the butter, sugar, flour, salt, almonds and vanilla sugar into crumbles. Spread the crumble on the sheet cake. Bake the cake in the preheated oven for approx. 35-40 minutes until golden brown.
