Rainbow Cake

Whether it’s an adult or a child’s birthday – this cake is guaranteed to please everyone. With our simple instructions, you’re guaranteed to make this rainbow cake with delicious buttercream.

Rainbow Cake

Ingredients for Rainbow Cake:

200 g soft butter
160 g sugar
1 packet vanilla sugar
5 eggs
400 g wheat flour
1 pck. Baking powder
1 pinch salt
1 TSP. lemon zest
250 ml milk
4 different food colouring (red,yellow,green,blue)

FOR THE FILLING
600 g cream cheese
250 g soft butter
120 g Icing sugar
Colourful sugar sprinkles (sugar confetti)

Instructions:

Mix the butter with the sugar and vanilla sugar. Gradually stir in the eggs. Mix flour with baking powder, salt and lemon zest and add to the batter alternately with the milk. Mix well.

Divide the batter between 6 cereal bowls. Add a few drops of food colouring to each bowl. You can mix orange with yellow and red. Add 1 drop of red and 3-4 drops of yellow to the bowl and mix well. Purple can be achieved by adding 1 drop of blue and 3-4 drops of red food colouring.

Grease the springform pan (Ø 20 cm) well. Preheat the oven to 350 degrees. Pour the first coloured batter into the springform pan and smooth it down. (To make it easier to remove the thin cake from the base later, you can also cut a sheet of baking paper into rounds and place it in the tin. You can easily peel this off the cake later).

Bake the base in the preheated oven for about 15-20 minutes. Allow the cake to cool, then remove from the tin. Continue in this way with each cake.

When all the cake layers have cooled, you can prepare the filling. Open the cream cheese and drain well. Then mix the cream cheese well with softened butter and icing sugar. Place the first cake layer (purple) on a cake plate. Pour approx. 2-3 tablespoons cream on top and smooth it down. Place the next pastry case (blue) on top. Continue in this way until all the bases are on top of each other.

Now spread the rest of the cream all over the cake. Finally, sprinkle the cake with coloured sugar sprinkles as desired. Chill until ready to serve.
