Plum Cake Recipe

This plum cake recipe is baked so quickly, super tasty and fluffy light. Perfect when guests announce themselves spontaneously or you don’t want to spend a lot of time in the kitchen.

Ingredients for Plum Cake Recipe

700 g plums
250 g flour
1 pk. baking powder
200 g butter (soft)
150 g sugar
1 pk. vanilla sugar
1 pinch of salt
4 eggs
Powdered sugar (for dusting)


Wash, stone and quarter the plums.

Put flour and baking powder in a bowl and mix.

Place butter, sugar, vanilla sugar and 1 pinch of salt in another bowl and beat with the whisks of a hand mixer for at least 8 minutes until fluffy. Beat in eggs, one at a time, for 1⁄2 min. each. Stir in flour mixture briskly at lowest speed.

Pour batter into a greased springform pan (26 cm Ø) and spread evenly with a pastry spatula. Place the plums in a flaky pattern on the dough and press them in lightly. Bake in preheated oven at 350 F in lower third of oven for 1 hour. Let cool on a cooling rack.

Loosen springform pan rim from cake, place cake on a platter and serve dusted with powdered sugar.
