Peanut Butter Cake

Peanut Butter Cake

Ingredients for Peanut Butter Cake:

4 eggs
80 g sugar
1 packet vanilla sugar
100 g wheat flour
50 g ground almonds
1 tsp baking powder
3 tsp cocoa powder
200 g whipped cream
2 packets of cream thickener
300 g cream cheese 0.2 % fat
150 g peanut butter Creamy
60 g icing sugar
75 g dark chocolate
2 tbsp peanuts roasted & unsalted


Beat the eggs with 2 tbsp. water with the whisks of the mixer. Add the sugar and vanilla sugar and beat for several minutes until the mixture is firm and creamy.

Mix the flour, almonds, baking powder and cocoa powder and fold into the egg mixture with a whisk. Line the bottom of a springform pan (18 cm diameter) with baking paper. Pour in the dough, smooth down and bake in a preheated oven at 350 °F top/bottom heat for approx. 35 minutes. Test with chopsticks. Remove the base and leave to cool completely.

Whip the cream with 1 sachet of cream thickener until stiff. Mix cream cheese with Calvé peanut butter and icing sugar until smooth. Stir in the cream thickener. Fold in the cream. Pour 3-4 tbsp. of the cream into a piping bag and refrigerate until you are ready to decorate the cake.

Cut the cake twice. Spread approx. 1/3 of the cream on the bottom layer. Place the second cake layer on top and spread 1/3 of the cream again. Place the third cake layer on top and spread the remaining cream on all sides. Chill the cake for at least 3 hours.

Melt the chocolate in a bain-marie. Chop the peanuts. Cover the peanut chocolate cake with the chocolate and immediately sprinkle with the chopped peanuts and a few chocolate chips. Decorate with the chilled cream in a piping bag before serving.
