Orange Chocolate Cake

Chocolate cake comes in all sorts of varieties. Nuts are also always fine in the Orange Chocolate Cake. This time I decided to use pecans. But you can also take walnuts

Orange Chocolate Cake

Ingredients for Orange Chocolate Cake:

60 g Pecans or walnuts
180 g Chocolate with 70% cocoa
190 g Butter
180 g Milk
175 g brown cane sugar
2 eggs
150 g orange curd
180 g flour
20 g baking cocoa
5 g baking powder

Topping:
60 g powdered sugar
2 tbsp. orange juice
a little orange zest
1 egg white

Method:

Preheat oven to 310 °F.

Add pecans to the mixing bowl and chop for 3 sec. / speed 5 and transfer.

Add chocolate to the mixing bowl and chop for 4 sec / speed 7.

Add milk and butter and heat for 4 min / 122 °F / speed 2.

Add brown cane sugar, eggs and orange curd and mix for 15 sec / speed 4.

Add flour, cocoa, baking powder and chopped nuts and mix for 15 sec / speed 4.

Pour batter into greased swirl pan and bake cake at 310 °F for 60 min. Test with chopsticks.

Let the cake cool completely in the pan and then remove it.

Topping:
Put the beater in the clean mixing bowl. Add egg whites and beat for 2 min / 100 °F / speed 3.

Meanwhile, mix the powdered sugar with the orange zest grate and the orange juice.

Stir in about half of the beaten egg whites and spread the mixture over the cake.
