You should definitely try the classic French madeleines. The melted butter makes them wonderfully tender and so quick to bake.


Ingredients for Madeleines

150 g butter
3 eggs
150 g sugar
½ tsp salt
1 vanilla bean
1 tbsp honey
160 g flour
½ tsp baking powder
some butter for the mould


Melt the butter in a saucepan and leave to cool for at least 15 minutes. Beat the eggs with the sugar, salt, vanilla bean and honey for 1 minute with the whisk of a hand mixer until foamy. Mix the flour with the baking powder and stir into the mixture. Finally, add the melted butter and mix. Refrigerate for at least 2 hours.

Preheat oven to 350 degrees. Grease the madeleines mould. If you don’t have a madeleines tin, you can also use a muffin tin. Pour the batter into a piping bag and fill the cavities evenly up to about 1/2 cm below the rim. Place the mould on a cake rack.

Bake the madeleines for approx. 12 minutes. Leave to cool in the tin for 5 minutes. Remove the madeleines from the tin and bake the remaining batter in the same way. Packed airtight, the madeleines will keep for at least 2 weeks.
