Lemon Loaf Cake

Lemon Loaf Cake

Ingredients for Lemon Loaf Cake

200 g soft butter
150 g sugar
2 tbsp. lemon juice
4 eggs
250 g flour
1 sachet baking powder
1 tsp lemon zest
a little butter for the mould

For the glaze:
1 medium lemon (juice from it)
300 g icing sugar


Preheat the oven to 350 degrees. Grease the loaf tin (length 25 cm) well. Rinse the silicone mould with cold water, do not dry it. Mix the butter, sugar and lemon juice briefly. Gradually stir in the eggs.

Mix together the flour, baking powder and lemon zest. Stir into the butter and sugar mixture. Bake the cake in the preheated oven for approx. 45 minutes. After approx. 30 minutes, cover the cake with some aluminium foil to prevent it from getting too dark. Remove the cake from the oven and leave to cool for approx. 10 minutes!

For the glaze, mix the lemon juice and icing sugar together so that the glaze is thick (if it is too runny, just add more icing sugar).

Tip: Carefully prick the still-warm cake several times with a fork. Pour the icing over it. This makes the cake even more moist! The cake makes about 12 pieces. If you make the cake in a normal loaf tin, prick the cake while it is still in the tin and pour some lemon juice over it. Allow the cake to cool, remove from the tin and then pour the icing over it. Allow the icing to set.
