These Australian Lamingtons taste adorable. To make them, the recipe bakes cakes, cubes them and tops them with chocolate icing and coconut.
Ingredients for Lamingtons:
3 pcs eggs
110 g sugar
130 g flour
1 tsp cornflour
1 tsp butter
3 tsp water, very hot
200 g coconut flakes, for rolling
Ingredients for the icing:
250 g icing sugar
4 tsp cocoa powder
240 ml water, very hot
2 tsp butter, melted
For the Australian Lamingtons, first preheat the oven to 350 °F (top and bottom heat) and line a square cake tin (approx. 24×24 cm) with baking paper.
Separate the eggs and beat the whites in a bowl until stiff. Then gradually add the sugar and continue to beat until the sugar has dissolved.
Now stir in the egg yolks, mix in the flour and starch and just barely mix in. Mix the butter with the hot water until the butter has melted and then stir it in.
Pour the batter into the prepared tin and bake in the preheated oven on the middle shelf for about 25 minutes. Then remove and leave to cool.
For the glaze, mix the icing sugar with the cocoa. Mix the hot water and the butter and then stir in.
Cut the cooled cake into approx. 6×6 cm cubes in the mould. Dip the cubes in the icing, then roll in the coconut flakes and leave to dry on a cake rack for at least 1 hour.
