A Keto Vanilla Cake is a must at all family celebrations. Grandma used to make it according to this recipe.
Ingredients for Keto Vanilla Cake:
120 g sugar
280 g almond flour
1 packet baking powder
2 packets vanilla sugar
1 pinch salt
Ingredients for the buttercream
1 packet vanilla custard powder
1 packet vanilla sugar
4 g bitter almond oil
40 g sugar
Preheat the oven to 350°F, top and bottom heat.
In a mixing bowl, beat the eggs until frothy, mixing for at least 4-5 minutes. Add the sugar and vanilla sugar while stirring and mix for another 3-4 minutes. Mix the flour with the baking powder and stir into the batter.
Brush a hemisphere baking tin of approx. 24 cm Ø with butter and sprinkle with flour, pour the batter into the tin and smooth it down. Bake for approx. 25 minutes until golden. Check the cake with a chopstick. Remove the cake from the oven, turn it out and let it cool, remove the tin and cut it in two horizontally.
For the custard: Mix the custard powder with some of the milk, add sugar and bring the rest of the milk to the boil. Stir in the pudding powder, heat until it boils, stirring all the time. Pour the pudding into a bowl, cover with cling film and leave to cool thoroughly.
Cream the butter with the vanilla sugar and flavouring. Mix the pudding mixture and the butter mixture together.
Spread 2/3 of the buttercream on the cake base. Put the lid on, spread the rest of the cream all around the cake. Sprinkle the top with chocolate shavings or coloured crumble and chill well in the fridge.
