Keto Red Velvet Cake

Keto Red Velvet Cake

Ingredients for Keto Red Velvet Cake:

50 g soft butter
75 g Xucker light (erythritol)
3 eggs
1 tbsp vanilla extract
50 g almond flour
40 g coconut flour
1/2 packet baking powder
1 tbsp cocoa
1 tbsp tasteless whey protein
1 pinch iodised salt
50 g skyr
1 bottle of red food colouring

for the cream:
250 g light cream cheese
40 g soft butter
75 g icing sugar made from erythritol
1/2 tbsp vanilla extract

Instructions:

First preheat your oven to 330°F and grease a small springform pan.

Then, in a saucepan, mix the butter with the erythritol and gradually add the eggs and vanilla extract.

Set this aside for now and in a separate bowl mix together the coconut flour, almond flour, baking powder, cocoa, protein powder and salt.

Mix everything well and then add the dry ingredients to the liquid ingredients.

Stir well and then mix in the skyr and red food colouring.

Now you have two options:
Either you bake a cake with only one layer or with two layers.

If you want to make one layer, put all the batter in the springform pan and bake it in the oven for about 20 to 30 minutes.

If you want to make two layers, bake half of the dough first and then the other half.

While the pastry is baking in the oven, prepare the crème.

Mix the butter with the cream cheese and then add the vanilla extract and the icing sugar-erythritol. Then put the cream in the fridge for a while so that it becomes a little firmer.

Once the cake is baked and cooled, spread the cream on the base.

If you want the cake to have several layers, spread the cream on one layer first, then place the other layer on top and the rest of the cream on top of that. That’s it!
