Keto Chocolate Mousse Cake

Who doesn’t love dipping their spoon into Keto Chocolate Mousse Cake? The next step up for all chocolate mousse fans is this Vegan Chocolate Mousse Cake with 3 layers. The bottom layer consists of light chocolate sponge cake, followed by the chocolate mousse layer and the top chocolate ganache.

Keto Chocolate Mousse Cake

Ingredients for Keto Chocolate Mousse Cake:

Base:
100 g spelt flour
20 g cocoa powder
50 g organic cane sugar
1 /2 tsp baking soda
¼ tsp baking powder
120 ml oat milk, room temperature
30 ml coconut oil
1 tsp vanilla extract
¼ tsp salt
1 tbsp apple cider vinegar

Chocolate mousse layer:
180g dark chocolate
500g vegan cream (whippable)

Ganache:
80g dark chocolate
100g vegan cream

Instructions:

For the sponge layer, mix the spelt flour with the cocoa powder, baking powder, baking soda and salt. Add the sugar, oat milk, coconut oil and vanilla and mix well. Finally, briefly fold in the apple vinegar and immediately pour the mixture into the pre-greased 20 cm springform pan. Bake at 350° for approx. 12-15 minutes.

For the mousse layer, melt the chocolate in a bain-marie. Whip the cream and then add a little more chocolate at a time to the cream for colour gradation.

Leave the cake to set in the fridge for about 1 hour.

For the ganache, chop the chocolate and place in a bowl. Bring the cream to the boil and pour over the chocolate. Leave to stand for approx. 2 minutes and then stir. Pour the ganache over the mousse and leave to set in the fridge overnight.
