Keto Cheesecake

I’m really not a huge baking genius, but this quick and easy Keto Cheesecake succeeds me really always. So he succeeds also you, for sure! It is wonderfully creamy and deliciously fresh. Perfect for all cheesecake fans who would like to enjoy a figure-friendly cake without regret.

Keto Cheesecake

Ingredients for Keto Cheesecake:

100g almond flour
40g bamboo fiber
1/2 tsp xanthan gum (1g)
30g protein powder neutral
10g ground psyllium husks
60g butter (soft)
some ground vanilla
grated lemon peel
110g stevia-erythritol (sweetening power 1:1 like sugar)
5 drops of unsweetened vanilla flavoring
1 egg
2 – 3 tablespoons cold water

For the cheesecake cream filling:
500g cream cheese natural
2 eggs
5 drops of unsweetened vanilla flavoring
100ml whipped cream
110g stevia erythritol (sweetening power 1:1 like sugar)
1/4 tsp ground vanilla
8g egg white powder
30g protein powder neutral

To serve:
Fresh blueberries
Some blueberries sauce (for this, for example, simply puree blueberries with a little sugar and / or vanilla sugar.

Instructions:

Grind stevia-erythritol, lemon zest and vanilla to a fine powder.

Knead all ingredients for the shortcrust pastry with the dough hook of the food processor/mixer to a smooth shortcrust pastry.

Cut off about 1 third of the dough (use the rest for other purposes) and line the bottom of the springform pan with it. I always do this by pressing the dough evenly into the pan with my fingers.

Filling:
Grind stevia-erythritol and vanilla to a fine powder.

Beat sweetener with eggs, vanilla flavoring and egg white powder on high speed for several minutes until light and creamy.

Add protein powder, cream cheese and whipping cream and mix again briefly on high speed until a nice creamy mixture is formed.
Pour the cheesecake mixture into the springform pan.

Put it in the oven (on the middle shelf) – the baking time is 40 minutes.

At the end of the baking time, remove the cheesecake and let it cool completely in the pan.

Attention, when you take it out, the cream is still relatively soft and flabby, it has to be 😉 It will firm up when it cools down.

Remove the cooled cheesecake from the mold and serve with blueberries sauce well chilled.
