Irish Potato Cakes are round potato dumplings made from a potato mixture and freshly grated potatoes. They come from the cuisine of Ireland and are prepared in different ways.
Ingredients for Irish Potato Cakes Recipe:
250 g potatoes
125 g flour
1 pinch baking powder
150 ml buttermilk
salt & pepper
a little oil
Wash two thirds of the potatoes and boil them in a pot until soft. Wash, peel and grate the remaining potatoes. Put them in a kitchen towel and squeeze them well.
Drain the cooked potatoes, peel and press through a potato ricer. Let the potato mixture steam out.
Separate the eggs and mix the egg yolks with the flour, baking powder, potato mixture and potato flakes and add the buttermilk. Beat the egg whites until stiff and fold into the potato mixture with salt & pepper.
Heat a pan with a little oil and pour in the potato mixture with a ladle. Fry the boxty on both sides until golden brown.
This potato side dish is sure to end up on our plates again, especially with salmon farmed in Irish waters I think. But they can be enjoyed with an incredible range of other ingredients too.
Another way to prepare this boxty is if you have some mashed potato left over. Then mix it with 2 grated raw potatoes, egg and flour and bake it in a pan. It also tastes very good in this modified form, and it’s a good way to use leftovers.
