Ingredients for Honey Cake Recipe

250 g honey
125 g soft butter
2 eggs
300 g flour
1 pinch Salt
½ TSP Gingerbread spice
1 TSP. Lemon zest
1 pck. baking powder
a little butter for the mould
a little icing sugar for dusting

Instructions

For the dough, mix together the honey, butter and eggs. Combine the flour, salt, gingerbread spice, lemon zest and baking powder and add to the butter and egg mixture. Mix well.

Preheat oven to 350 degrees. Grease a loaf tin (25x11cm) or just briefly rinse a silicone loaf tin with cold water and do not dry. Pour in the batter and smooth it down. Bake in the preheated oven for approx. 30 minutes. Then leave to cool and dust with a little icing sugar before serving.
