Easy Lemon Cake – I bet this recipe will become your favorite cake! It has an ultra lemony, fresh flavor and gets an extra kick from good olive oil. Ready for an extra bit of summer feeling and sunshine? Then preheat the oven!
Ingredients for Easy Lemon Cake:
400 g Greek yoghurt
380 g flour
200 ml olive oil
250 g sugar
2 tsp vanilla extract
2 organic lemons (grated)
1 tsp salt
4 tsp baking powder
4 tbsp icing sugar
Preheat the oven to 347°F. Grease a cake pan with a little butter.
Beat sugar and eggs with a mixer until creamy. Add yogurt, vanilla extract, lemon zest and olive oil and mix until everything is combined.
Mix flour, salt and baking powder and fold into the liquid batter. Pour the batter into the bundt pan and bake the cake in the oven for 50-60 minutes. To be on the safe side, test the cake and adjust the baking time if necessary.
Let the cake cool completely on a wire rack, then invert onto a cake plate. Dust with powdered sugar before serving.
