Easter Chocolate Cake

Easter Chocolate Cake

Ingredients for Easter Chocolate Cake:

3 smaller untreated oranges
225 g sugar
250 g butter or margarine
6 eggs
300 g flour
40 g cocoa powder
2 heaped teaspoons baking powder
100 ml milk
150 g orange marmalade
400 g dark chocolate coating
200 g whipped cream
4-5 candied orange slices
Grease and flour for the mould
Aluminium foil

Instructions

2 Wash the oranges in hot water, rub them dry, peel off the orange peel as a long ribbon all around using a canner and wrap it around the handle of a wooden spoon or spoons and freeze.

Peel the oranges so that the white skin is completely removed. Remove the fillets from between the membranes with a sharp knife and drain in a sieve. Squeeze the juice out of the skins. Pour the squeezed and drained juice together and measure out 75 ml. (Simmer the juice and 25 g sugar until the sugar is dissolved. Remove syrup from heat

Cream the fat and 200 g sugar with the whisk of a hand mixer. Stir in the eggs one at a time. Mix flour, cocoa and baking powder and stir into the egg mixture alternately with the milk. Fold in the orange fillets. Pour the batter into a greased, floured springform pan (26 cm Ø) and smooth it down. Bake the cake in a preheated oven 350 °F for 60-70 minutes (test with a stick!). Cover with foil at the end if necessary.

Bring the orange syrup to the boil again. Remove the cake, loosen it from the edge of the tin with a small knife, pour the syrup over it while it is still hot and leave to cool in the tin.

Remove the cake from the tin and cut in half horizontally. Stir the orange marmalade until smooth, spread on the bottom layer, leaving 1-1.5 cm free to the edge. Place the lid on top, press down a little and chill.

Chop the couverture, heat with the cream in a saucepan while stirring and melt carefully. Pour into a mixing bowl and leave to cool for 30-40 minutes. When the icing is thick, place cake on a cake rack. Spread the icing on the cake in a wavy pattern. Leave in a cool place to set. Cut candied oranges into quarters. Place cake on a cake plate, decorate with orange quarters and orange spirals.

Waiting time 4 1/2 hours.
