Super moist Date and Walnut Cake. Perfect for breakfast, as a snack or for coffee and cake.

Date and Walnut Cake

Ingredients for Date and Walnut Cake:

200 g dates soaked in hot water for 20 min.
50 g coconut blossom sugar
250 g spelt flour
300 ml oat milk
40 g coconut oil melted
45 g walnuts
25 g almonds or other nuts
1 tsp vanilla extract
½ tsp cinnamon
1 tbsp. baking powder
1 tbsp. baking soda
1 tbsp apple cider vinegar


  • Preheat the oven to 180 degrees.
  • Brush a loaf tin with fat and dust with flour.
  • Mix the flour, sugar, baking powder, baking soda, cinnamon, vanilla and salt.
  • Drain the dates and chop them finely.
  • Stir the coconut oil and oat milk into the flour mixture.
  • Fold in the dates, walnuts and almonds. Stir in the vinegar briefly at the end.
  • Pour into the tin and sprinkle with almonds. Bake for 40 – 45 minutes. Test the cake with a chopstick to see if it is ready. If the dough is still sticking, leave in the oven for another 5-10 minutes.
  • Remove from the oven and leave to cool in the tin for 20 minutes, then place on a cooling rack to cool completely.
