Christmas Pudding Cake

Christmas Pudding Cake is a real British specialty made from dried fruit and nuts. The minerals are hardly affected by drying, on the contrary. Due to the dehydration z. B. iron, potassium and the digestive fiber in concentrated form.

Christmas Pudding Cake

Ingredients for Christmas Pudding Cake:

150 g sultanas
150 g currants
100 g dried plums
40 ml apple juice
1 apple
50 g candied lemon peel
50 g candied orange peel
60 g lukewarm butter
75 g wholemeal breadcrumbs
75 g wholemeal spelt flour
75 g ground hazelnuts
50 g brown raw cane sugar
3 eggs
¼ tsp clove powder
½ tsp cinnamon


First scald the sultanas and currants, put them in a sieve and let them drain. Finely chop the prunes and mix with the sultanas, currants and apple juice.

Peel the apple, cut into quarters, remove the core and grate finely. Add to the sultana mix together with the finely chopped candied lemon peel and candied orange peel.

Add the butter, breadcrumbs, flour, nuts, sugar, eggs, cloves and cinnamon to the fruit and knead everything into a dough. Pour the Christmas pudding into a buttered pudding mould and cover with a lid or aluminium foil. Place in a hot water bath on a rack and cook in a preheated oven at 300 °F for about 3 hours.

Store in the closed tin until ready to serve. Turn out the Christmas pudding to serve.
