480 g bean paste, sweetened red
1 tbsp water, to coat
Ingredients for the dough:
100 g flour
70 g beet syrup
1 tsp sunflower oil
2 tbsp vanilla sugar
Ingredients for coating:
1 tsp water
For the Chinese Mooncake, first whisk the syrup and oil with a mixer to make a homogeneous liquid.
Now add the vanilla sugar and flour and mix with the mixer to form a crumbly dough. Then continue to knead with your hands until it is smooth. Then cover the dough and let it rest in the fridge for 3 hours.
Next, fry the red bean paste in a pan until it has dried and resembles the consistency of thick mashed potato. Leave the bean paste to cool and shape into 6, approx. 4 cm, balls with your hands.
Preheat the oven to 400 °F. Dust a moon cake tin with a little flour and line a baking tray with baking paper.
Now form 6 approx. 2 cm balls from the dough, roll them out as thinly as possible and then place them around the bean balls. Then roll round again, place one ball in the prepared moon cake tin and press down well.
Turn the cake out of the tin onto the baking tray, then prepare the remaining cakes in the same way. Finally, brush them all with a little water and bake in the preheated oven for about 10 minutes.
Then take them out, let them cool for about 5 minutes, mix the egg with the water and brush the mooncakes with it.
Then place the tray in the oven for another 25 minutes and finish baking the mooncakes. After they are done, let them cool completely and let them rest in an airtight tin for three days until they are soft.
