Best Christmas Cake

This Best Christmas Cake thrives on the harmony between the fruity apple and the warm spices. This Christmas cake has a lot of flavour, yet is quick and easy to bake.

Ingredients for Best Christmas Cake:

4 eggs
100 gram xylitol
200 gram yoghurt
50 ml apple juice naturally cloudy
220 grams almond flour, not de-oiled
100 grams grated hazelnuts
1 packet cream of tartar baking powder
1 tbsp ground cinnamon
2 tablespoons cocoa double de-oiled
a pinch of clove powder
a pinch of rock salt
100 g grated apples
50 ml vegetable oil
butter to grease the baking tin
powdered xylitol for dusting
a few currants and fir branches for garnishing

Decoration:
100 g Dark chocolate coating
100 g Cream
15 g Glucose syrup
1 TSP. Coconut fat

Instructions:

Beat the eggs with the xylitol and stir in the yoghurt and apple juice until smooth.

Stir in the almond flour, hazelnuts, baking powder, cinnamon, cocoa, clove powder and rock salt.

Mix in the grated apples.

Grease a 22 cm diameter cake tin well with butter and pour in the batter.

Heat the oven to 340° F and bake the Gugelhupf at top and bottom heat for 50 minutes.

Remove from the oven, leave to cool, sprinkle with powdered xylitol, garnish with currants and pine branches, serve, cut and enjoy.

For the drip effect, bring the cream to the boil in a small saucepan and pour over the chopped couverture. Mix well until all the couverture pieces have melted. Add the glucose syrup and the coconut oil. Allow the chocolate glaze to cool briefly and pour onto the centre of the cake, using a small palette to spread the ganache so that it overflows a little.
