Banana Bread Cake

Great recipe for Banana Bread Cake. It tastes so good! With bananas, oatmeal, ground nuts, cinnamon & spelt flour. Optionally with maple syrup or honey.

Banana Bread Cake

Ingredients for Banana Bread Cake:

3 pieces ripe bananas
2 eggs
100 g maple syrup or honey
70 g coconut fat
100 g (wholemeal) spelt flour
50 g ground hazelnuts or almonds
200 g ground oat flakes
2 tsp (cream of tartar) baking powder
1 tsp cinnamon
90 ml milk or vegetable milk

Method:

Mash 2 bananas with a fork. Grind the oat flakes finely in a chopper.

Beat the eggs until creamy. Add the banana, coconut oil and maple syrup and stir in.

Add the flour, nuts, almonds, baking powder and cinnamon and stir briefly. Finally, add the milk so that the dough does not become too firm.

Preheat the oven to 340°F convection oven. Grease the loaf tin. Pour the batter into the tin, peel the last banana, cut it in half and place it on top of the cake.

Bake the banana cake for about 50 minutes. Test with a chopstick. If the cake gets too dark, you can cover it with baking paper towards the end of the baking time.

Notes:

*Note 1: If you are making the cake for babies, do not use honey, the bananas should be enough for sweetness.

*Note 2: You can also replace the flour (any flour) with ground nuts, almonds or rolled oats.
